Ingredients
  

  • 2 large boneless skinless chicken breasts​
  • ½ teaspoon garlic powder​
  • Salt and freshly ground black pepper to taste​
  • 1 tablespoon olive oil​
  • 1 tablespoon unsalted butter​
  • ½ medium onion finely chopped​
  • ¾ cup low-sodium chicken broth​
  • 1 5.2 oz package Boursin Garlic & Fine Herbs cheese​
  • Fresh parsley chopped (optional, for garnish)​

Equipment

  • Large skillet or sauté pan
  • Cutting board and sharp knife​
  • Meat thermometer (optional but recommended)​
  • Wooden spoon or silicone spatula​

Method
 

Prepare the Chicken
  1. Slice each chicken breast horizontally to create two thinner cutlets. Season both sides with garlic powder, salt, and pepper.
Sear the Chicken
  1. In a large skillet, heat olive oil and butter over medium-high heat. Add the chicken cutlets and sear for 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Sauté the Onion
  1. In the same skillet, add the chopped onion. Sauté for 2-3 minutes until translucent and fragrant.​
Create the Sauce
  1. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Reduce the heat to medium and add the Boursin cheese. Stir continuously until the cheese has melted and the sauce is smooth.​
Combine and Serve
  1. Return the seared chicken to the skillet, spooning the sauce over the top. Simmer for an additional 2-3 minutes to ensure the chicken is heated through. Garnish with chopped fresh parsley before serving.​
