Combine Ingredients
- In a large saucepan or slow cooker, combine the cherry juice, cherries (with syrup), and sugar. Stir well to combine.
Heat the Mixture
- Heat the mixture over medium heat until it reaches a gentle boil. Reduce the heat and let it simmer for about 30 minutes, stirring occasionally to ensure the sugar dissolves completely.
Cool the Mixture
- Remove the saucepan from heat and allow the mixture to cool to room temperature. This may take several hours, but it’s important to ensure the mixture is completely cool before proceeding.
Add Alcohol and Almond Extract
- Once the mixture is cool, stir in the Everclear or vodka and almond extract, if using. Mix well to combine.
Bottle the Moonshine
- Pour the moonshine into mason jars or other sealable glass containers. If desired, use a fine mesh strainer to remove any solids for a smoother drink.
Infuse and Store
- Seal the jars tightly and store them in a cool, dark place. For the best flavor, allow the moonshine to infuse for at least 2 weeks before consuming.
