Preheat the Oven
- Begin by preheating your oven to 300°F (150°C).
Prepare the Chicken Mixture
- If using whole chicken thighs or breasts, cut them into manageable pieces and process them through a meat grinder or food processor until finely ground. Transfer the ground chicken to a mixing bowl.
Season the Chicken
- In a small bowl, combine the sea salt, black pepper, garlic powder, onion powder, paprika, chipotle powder (if using), cumin, and nutritional yeast.
- Add this spice blend to the ground chicken and mix thoroughly using a rubber spatula. For a smoother texture, you can process the seasoned chicken mixture through the grinder or food processor once more.
Roll Out the Chicken
- Place a sheet of parchment paper on a flat surface. Spoon half of the chicken mixture onto the center of the parchment. Cover with a piece of plastic wrap and use a rolling pin to flatten the chicken as thinly as possible, aiming for a translucent layer. Repeat this process with the remaining chicken mixture on a separate sheet of parchment.
Bake the Chicken Sheets
- Carefully transfer the parchment sheets with the flattened chicken onto baking trays. Remove the plastic wrap.
- Bake in the preheated oven for 35 to 45 minutes, or until the chicken sheets are crispy and golden brown. Oven temperatures can vary, so start checking for doneness around the 30-minute mark.
Cool and Break into Chips
- Once baked, remove the trays from the oven and let the chicken sheets cool for about 5 minutes. They should be crisp to the touch.
- Break the sheets into chip-sized pieces. If any pieces are not as crispy as desired, you can return them to the oven for an additional 5-10 minutes.
Notes
For the best crunch, slice the chicken very thin or flatten it evenly if using ground meat. Pat the chicken dry before seasoning to help it crisp up in the oven or air fryer.
A wire rack placed over a baking sheet allows air to circulate and makes the chips extra crispy. Don’t overcrowd the tray—give each piece space to cook evenly. You can store leftovers in an airtight container, but reheat in the oven to keep them crispy.
