Ingredients
  

  • 2 boneless skinless chicken breasts, cut into bite-sized cubes
  • 1 cup of chicken broth
  • 1 cup of heavy cream
  • 1 ½ cups shredded Swiss cheese Gruyère works wonderfully
  • 1 tablespoon butter
  • 2 teaspoons Dijon mustard
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Fresh parsley optional, for garnish

  • Skewers or fondue forks

Method
 

Prepare the Chicken
  1. Start by cutting your chicken breasts into bite-sized cubes. Make sure the pieces are similar in size for even cooking. Set aside.
Heat the Fondue Pot
  1. In a fondue pot or small heavy-bottomed pot, melt the butter over medium heat. Once melted, add the chicken broth and bring it to a gentle simmer.
Add the Cream and Seasoning
  1. Once the broth is simmering, stir in the heavy cream, Dijon mustard, garlic powder, salt, and pepper. Let this mixture cook for about 3-4 minutes, stirring occasionally.
Melt the Cheese
  1. Gradually add the shredded Swiss cheese to the pot, stirring constantly until it’s completely melted and smooth. This should take about 3-5 minutes. You want a creamy and luscious texture.
Cook the Chicken
  1. Now, carefully add the chicken cubes into the cheese mixture. Allow the chicken to cook for about 8-10 minutes, stirring gently every few minutes. You’ll know the chicken is cooked when it turns white and no longer looks pink inside.
Serve
  1. Once the chicken is cooked through, remove the fondue pot from the heat. Place the fondue forks or skewers on the side, and you’re ready to dip! Garnish with fresh parsley if desired for a pop of color.

Notes

If you’re using skewers or fondue forks, make sure to remind your guests to be careful when dipping the chicken into the hot cheese.
The fondue can be quite hot and will retain its heat for a while, so it’s best to wait a few moments before digging in.
