Ingredients
  

For the Salad:
  • 2 cups cooked chicken breast shredded
  • 3 cups Napa cabbage finely shredded
  • 1 cup red cabbage finely shredded
  • 1 cup carrots julienned
  • 1 red bell pepper thinly sliced
  • 2 green onions chopped
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup crispy chow mein noodles or wonton strips
  • 2 tablespoons toasted sesame seeds​
For the Dressing:
  • 1/4 cup rice vinegar
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or agave syrup
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 teaspoon fresh ginger grated
  • 1 garlic clove minced
  • Salt and pepper to taste​

Method
 

Prepare the Chicken
  1. If you don’t have pre-cooked chicken, boil or grill 2 chicken breasts until fully cooked. Let them cool, then shred into bite-sized pieces.​
Make the Dressing
  1. In a small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, vegetable oil, grated ginger, and minced garlic. Season with salt and pepper to taste. Set aside to allow flavors to meld.​
Assemble the Salad
  1. In a large mixing bowl, combine shredded Napa cabbage, red cabbage, carrots, red bell pepper, green onions, and cilantro. Add the shredded chicken.​
Toss with Dressing
  1. Pour the prepared dressing over the salad mixture. Toss thoroughly to ensure all ingredients are well coated.​
