🔪 Step 1: Prep Ingredients
- Preheat your oven to 350°F (175°C).
- Grease your loaf pan or line it with parchment paper.
- Mash the bananas in a large bowl using a fork.

- Add cottage cheese, eggs, melted coconut oil, honey, and vanilla to the mashed bananas.
- Whisk until the mixture is creamy and well combined.

- In a separate bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.
- Gradually fold the dry mixture into the wet ingredients.
- Stir gently until just combined (don’t overmix).
- Add walnuts or chocolate chips if using.
🍞 Step 4: Bake the Banana Bread
- Pour the batter into the prepared loaf pan.
- Smooth the top and give it a gentle tap to release air bubbles.
- Bake for 50–60 minutes or until a toothpick inserted comes out clean.
- Let it cool for 10–15 minutes before slicing.
Notes
If your cottage cheese is chunky, I like to blend it for a few seconds to make the texture smoother before mixing it in. This helps create a more even batter and a softer crumb. Also, make sure your bananas are very ripe—those black-spotted ones are perfect.
