  • 1 1/2 cups whole wheat flour or all-purpose
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Optional: 1/2 cup chopped walnuts or dark chocolate chips

  • Mixing bowls
  • Fork or potato masher
  • Whisk
  • Measuring cups & spoons
  • 9×5-inch loaf pan
  • Parchment paper (optional)
  • Oven

Method

🔪 Step 1: Prep Ingredients
  1. Preheat your oven to 350°F (175°C).
  2. Grease your loaf pan or line it with parchment paper.
  3. Mash the bananas in a large bowl using a fork.
🥣 Step 2: Mix Wet Ingredients
  1. Add cottage cheese, eggs, melted coconut oil, honey, and vanilla to the mashed bananas.
  2. Whisk until the mixture is creamy and well combined.
🧂 Step 3: Add Dry Ingredients
  1. In a separate bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.
  2. Gradually fold the dry mixture into the wet ingredients.
  3. Stir gently until just combined (don’t overmix).
  4. Add walnuts or chocolate chips if using.
🍞 Step 4: Bake the Banana Bread
  1. Pour the batter into the prepared loaf pan.
  2. Smooth the top and give it a gentle tap to release air bubbles.
  3. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  4. Let it cool for 10–15 minutes before slicing.

Notes

If your cottage cheese is chunky, I like to blend it for a few seconds to make the texture smoother before mixing it in. This helps create a more even batter and a softer crumb. Also, make sure your bananas are very ripe—those black-spotted ones are perfect.
