Ingredients

  • 12 lasagna noodles cooked and drained
  • 3 cans 12 oz each evaporated milk
  • 2 packets 1 oz each ranch seasoning mix
  • 8 oz cream cheese softened
  • 3 cups shredded rotisserie chicken
  • cups shredded mozzarella cheese divided
  • cups shredded cheddar cheese divided
  • 3 oz bacon cooked and crumbled
  • Chopped green onions or fresh parsley for garnish optional

Equipment

  • Large pot for boiling noodles
  • Medium saucepan
  • 9×13-inch baking dish
  • Mixing bowls
  • Whisk or spoon
  • Aluminum foil
  • Oven

Method

Prepare the Noodles
  1. Cook the lasagna noodles according to the package instructions until al dente. Drain and rinse with cold water to prevent sticking.
Make the Sauce
  1. In a medium saucepan over low heat, combine the evaporated milk and ranch seasoning mix. Whisk until the seasoning is fully dissolved. Add the softened cream cheese and continue to whisk until the sauce is smooth and creamy.
Assemble the Lasagna
  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Spread a thin layer of the sauce on the bottom of the baking dish. Place a layer of cooked lasagna noodles over the sauce. Top with a portion of the shredded chicken, a sprinkle of mozzarella and cheddar cheeses, and a drizzle of the sauce. Repeat the layers until all ingredients are used, finishing with a layer of sauce and the remaining cheeses. Sprinkle the crumbled bacon on top.
Bake
  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
Rest and Serve
  1. Allow the lasagna to rest for 10 minutes before slicing. Garnish with chopped green onions or fresh parsley, if desired.

Notes

For best results, ensure the cream cheese is fully softened before incorporating it into the sauce to achieve a smooth consistency.
