Ingredients
  

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup unsweetened almond milk or any milk
  • ½ cup creamy peanut butter natural
  • ¼ cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup mini chocolate chips optional

Method
 

Step 1: Preheat the Oven
  1. I preheat my oven to 350°F (175°C) and line a muffin tin with silicone liners.
Step 2: Mix the Dry Ingredients
  1. In a bowl, I combine rolled oats, baking powder, cinnamon, and salt.
Step 3: Prepare the Wet Ingredients
  1. In another bowl, I whisk almond milk, peanut butter, honey, egg, and vanilla until smooth.
Step 4: Combine Wet and Dry
  1. I pour the wet mixture into the dry ingredients and mix until everything is well combined.
Step 5: Fill the Muffin Tin
  1. I scoop the mixture into the prepared muffin tin, filling each cup almost to the top.
Step 6: Add Toppings
  1. If I’m in the mood, I sprinkle some mini chocolate chips on top for extra flavor.
Step 7: Bake
  1. I bake for 22-25 minutes or until the oatmeal cups are set and lightly golden.
Step 8: Cool and Serve
  1. I let them cool for 5 minutes before removing them from the tin.
