Ingredients

  • 2 boneless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon butter
  • ½ cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • ½ teaspoon Italian seasoning
  • 1 tablespoon sun-dried tomatoes chopped
  • 1 cup fresh spinach
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Equipment

  • Large skillet or non-stick pan
  • Sharp knife and cutting board
  • Measuring spoons and cups
  • Mixing bowl
  • Spatula or wooden spoon

Method

Step 1: Prep the Chicken
  1. I pat the chicken breasts dry and season them with salt, black pepper, and a light sprinkle of Italian seasoning.
Step 2: Sear the Chicken
  1. I heat olive oil in a skillet over medium heat and sear the chicken breasts for 4–5 minutes on each side until golden brown. Then, I remove them from the pan and set them aside.
Step 3: Make the Creamy Sauce
  1. In the same skillet, I melt the butter and sauté garlic until fragrant. I pour in the chicken broth, add cream, and let it simmer for 2–3 minutes. Parmesan cheese goes in next, creating a rich and creamy sauce.
Step 4: Add the Flavor Boost
  1. I stir in sun-dried tomatoes and spinach, letting the spinach wilt gently into the sauce.
Step 5: Finish the Dish
  1. The chicken breasts go back into the pan, and I spoon the sauce over them. I let them simmer for 5 minutes so the flavors blend perfectly.
Step 6: Garnish and Serve
  1. I top the dish with fresh basil and serve immediately with pasta, mashed potatoes, or garlic bread.

Notes

I always make sure not to overcook the chicken, as it can turn dry. Keeping it juicy and tender is the secret to a restaurant-quality dish at home.
