Step 1: Prep the Chicken
- I pat the chicken breasts dry and season them with salt, black pepper, and a light sprinkle of Italian seasoning.
Step 2: Sear the Chicken
- I heat olive oil in a skillet over medium heat and sear the chicken breasts for 4–5 minutes on each side until golden brown. Then, I remove them from the pan and set them aside.
Step 3: Make the Creamy Sauce
- In the same skillet, I melt the butter and sauté garlic until fragrant. I pour in the chicken broth, add cream, and let it simmer for 2–3 minutes. Parmesan cheese goes in next, creating a rich and creamy sauce.
Step 4: Add the Flavor Boost
- I stir in sun-dried tomatoes and spinach, letting the spinach wilt gently into the sauce.
Step 5: Finish the Dish
- The chicken breasts go back into the pan, and I spoon the sauce over them. I let them simmer for 5 minutes so the flavors blend perfectly.
Step 6: Garnish and Serve
- I top the dish with fresh basil and serve immediately with pasta, mashed potatoes, or garlic bread.
Notes
