When Is Baked Salmon Done If You Don't Own a Meat Thermometer?
Baked salmon is done when the thickest part has turned from glossy and translucent to opaque, and the flesh separates into flakes when you press it gently with a fork. At 400°F, a 1-inch-thick fillet usually gets there in 12 to 15 minutes. If the center still looks wet and dark orange, or the fork meets resistance, give it 2 to 3 more minutes and check again.
